Theres a medical course with a bunch of anatomy
You could do that, but that will probably have a lot of obsolete information for this event from other systems. What I've done in the past is just jump around from video to video depending on my needs. However, courses might work for you, and that would still help a lot.

But in my experience, I've ended up memorizing so much information that was never in the test. For example, I feel if I analyze all of the layers of the pericardium, it would end up taking up half of my notesheet. Where do I draw the line of what to study and what not to study?

Its kinda hard to know what will be on a test but the test exchange is a good place to see what other people think is important to know, the handouts are a good resource for what to put on a note sheet if you haven't memorized everything on there.

Are you talking about the inside of the arteries and veins or the distribution through the body?

According to soinc.org, this is the rotation:
Year 1 Skeletal Muscular Integumentary (2016)
Year 2 Nervous Sense Organs Endocrine (2017)
Year 3 Respiratory Digestive Immune (2018)
Year 4 Cardiovascular Lymphatic Excretory (2019)
So yeah, we should be on muscular, skeletal, and integumentary next year.
