I'm having trouble building the ice cream tower (like physically sculpting it). Any ideas or techniques on how to?

How high are your towers stacking? For usually with skim milk you can easily get a 13cm tower just by piling it onto it self.

You should be able to find information on each of the topics on Wikipedia and the FDA website. A fair warning that the regulations will be a lot of reading, though.

I'm new on food science this year, so I was wondering, what exactly does "notebook" mean?
Do we put the labs in a binder and get that impounded? Where can I find the Notebook?

1. By notebook, they mean documentation of the 9 (at the minimum) labs that you perform. Full documentation includes a picture of the experiment, a writeup, and a data table. The form that must be used for writeups can be found here.
2. Yes, it must be impounded at competition.
3. You may use any binder as long as it has 3 rings.

I think they want a graph or chart comparing the data with your past experiment results? I'm not completely sure, please correct me if I'm wrong ;)

Hi Destiny, I would recommend using latex gloves so you don't melt the ice cream by using your hands.

How much Labeling Regulation info should we know? Do you think they will just test basic label reading, or more detailed knowledge on spacing and font and exceptions, etc., as found at http://www.fda.gov/Food/GuidanceRegulat ... 006828.htm, for example? Also, we learn about organic reactions. They give esterification and fat bonding as examples, but what are other common reactions they might test (like maybe spherification)?
