Depending on the competetion, you never know the height of the helicopter testing room will be. Sometimes it will range to 10 ft to maybe triple that. Just make sure you read any conditions for helicopters for your competetion to make sure you have the right settings on your helicopter.

I've heard that a thinner rubber is better for lower ceilings... is that true?

Test it and find out! Matching the rubber to the rotor to the site is the primary task in this event.

Hey just a spoiler here. I've tested that and well a thinner rubber band does really have the same thrust compared to a thicker rubber band. Go with thicker.
Also if you need to compare the longer rubber band vs. smaller it can vary both ways. With a longer rubber band you can wind the rubber band even more except you have a lot of potential winds left. As for a shorter rubber band you will have a more powerful thrust but has less winds. Test for yourself. It depends what results your aiming for.

I recommend gymnasiums for this kind of stuff. I'm sure many competitions have this event is a gym, because it is a big, wide open room and it tends to have good ceiling height.
